The different steps in the journey from plants to beans and to the cup also play a role in the final flavour profile.  This includes transportation, roasting, quality control and of course, the brewing to a cup of coffee.   Our coffee caring starts at the very early stage, at a young green bean, we watch it turn into a cherry before picking and inspection by hand after machined.   This is to ensure only the best bean is used for De Nae roasting.

All phases of coffee are watched by experts and are subject to multiple inspections.   The beans are sun dried/ processed, decorticated and locally roasted to perfection.  

Roasting

Once samples of beans have passed inspection and various tests, the whole batches of coffee are collected and are sent to the coffee roasting plant. The beans are brought to between 160 – 250 C for anywhere from 8 to 12 minutes, depending on the selected roasting profile.

The roasting is done in three phases: dehydration which eliminates the humidity, then the roasting process, and finally the cooling process. We use the most innovative artisanal roasting control and log system to eliminate unpredictable results and produce the desired specialty coffee. Our high-tech system helps calibrate the roasting profile and precisely tracks the beans for a more consistent and finely tuned the roasting process.

Our roasters not only understand the nature of the coffee bean; they also understand exactly how the roasting process can influence how strong or weak the color and taste will be. This is where the experience of our family and our plantation become fundamental to determine the ideal temperature and duration of the roasting.

Blending

The blending is a very important part of the process.  Each batch of the coffee is selected and qualified according to its sensory profile.  Each blend must combine the quality of various origins in order to obtain the ideal result, a perfect balance of taste and constant quality. Thus, our technology can only help to a certain point; the human element is vital. We picked the very best premium beans from well-known coffee regions to create a specialty coffee for our customers.

Packaging

The packaging phase is fundamental in order to keep the quality of the coffee fresh. We package our beans in a protected atmosphere, so that you can enjoy the aroma and taste of coffee that has just been roasted.
